Chocolate Caramel Crispy Cakes

Ingredients

  • 4 (2-ounce) chocolate candy bars (recommended: Mars Bars or Milky Way)
  • 1/2 stick unsalted butter
  • 2 1/2 cups crunchy sweetened corn cereal (recommended: Cornflakes)

  • Special equipment: approximately 40 mini muffin papers

Directions

Break the candy bars into bits and drop them into a saucepan. Add the butter and melt, over lowish heat, stirring frequently with a rubber spatula. When everything is melted (the nougat-like layer takes the longest to go), tip in the cereal and turn them, with your rubber spatula, in the chocolate mixture until they are all pretty well coated.

Fill the mini muffin papers with the mixture and put in the refrigerator, on a small sheet pan or tray, for at least 1 hour.


Dulce De Leche Cake with Caramel

Dulce de Leche Cake

Combine milk, eggs, and extract in a 2-quart measuring cup. (I forgot to take a picture of this).

Mix cake flour, sugar, baking powder, and salt in a stand mixer on low speed. Add butter and mix until mixture contains coarse crumbs.

Add all but 1/2 cup milk into flour mixture.

And beat at medium speed for 1 1/2 minutes (I actually used a timer on this... CI means business when they give you times and I didn't want Chris Kimball coming down to my kitchen and scolding me.

Add remaining milk mixture and beat 30 seconds more. Scrape sides of bowl and beat for another 20 seconds.

Divide cake mixture evenly between cake pans and bake at 350 F for 23-25 minutes.

How perfect does this cake look?

For the frosting: Melt 1/2 stick butter and add 1 cup packed dark brown sugar and 1/3 cup heavy cream.

Cook until the sugar is dissolved.

Transfer to a heat proof bowl and slowly add up to 3 cups of powdered sugar stopping when your frosting has reached it's desired consistency. NOTE - this frosting dries very quickly. Once you spread it on the cake, you must work quickly to smooth it out! If the frosting dries, add a little milk or heavy cream to smoothen it out again.

Choose your most level cake layer and place it bottom side up on a plate or turntable.

Place dulce de leche in a pastry bag with a large coupler tip and line the outside border of the cake with dulce de leche (for the dulce de leche filling, I lined this a little too close to the outside and it overflowed and streaked into my icing a bit... which I ended up liking the look of so it all worked out in the end).

Add more dulce de leche and fill in between the lines.

Repeat with remaining layers (I made a 3 layer cake).

Dulce de Leche Cake with Caramel Buttercream

  • Cake recipe adapted from Cooks Illustrated (I also made a 3-layer cake, but this recipe is for a 2-layer cake. To add the 3rd layer, increase ingredients by 1/2)
  • 2 1/4 cups cake flour (9 ounces), plus more for dusting the pans
    1 cup whole milk, at room temperature
    6 large egg whites (3/4 cup), at room temperature
    1 teaspoon vanilla extract
    1 3/4 cups granulated sugar (12 1/4 ounces)
    4 teaspoons baking powder
    1 teaspoon table salt
    12 tablespoons unsalted butter (1 1/2 sticks), softened but still cool

  • Caramel Frosting

  • Dulce De Leche (storebought or homemade)

  • Set oven rack in middle position. (If oven is too small to cook both layers on a single rack, set racks in upper-middle and lower-middle positions.) Heat oven to 350 degrees. Spray two 9-inch round cake pans with nonstick cooking spray; line the bottoms with parchment or waxed paper rounds. Spray the paper rounds, dust the pans with flour, and invert pans and rap sharply to remove excess flour.


  • Pour milk, egg whites, and extract into 2-cup glass measure, and mix with fork until blended. Mix cake flour, sugar, baking powder, and salt in bowl of electric mixer at slow speed. Add butter; continue beating at slow speed until mixture resembles moist crumbs, with no powdery streaks remaining.


  • Add all but 1/2 cup of milk mixture to crumbs and beat at medium speed (or high speed if using handheld mixer) for 1 1/2 minutes. Add remaining 1/2 cup of milk mixture and beat 30 seconds more. Stop mixer and scrape sides of bowl. Return mixer to medium (or high) speed and beat 20 seconds longer.

  • Divide batter evenly between two prepared cake pans; using rubber spatula, spread batter to pan walls and smooth tops. Arrange pans at least 3 inches from the oven walls and 3 inches apart. (If oven is small, place pans on separate racks in staggered fashion to allow for air circulation.) Bake until thin skewer or toothpick inserted in the center comes out clean, 23 to 25 minutes.

  • Let cakes rest in pans for 3 minutes. Loosen from sides of pans with a knife, if necessary, and invert onto wire racks. Reinvert onto additional wire racks. Let cool completely, about 1 1/2 hours.
  • Layer cakes with dulce de leche, frost with caramel buttercream and decorate as you wish!

Chocolate Cake with Caramel-Milk Chocolate Frosting

A classic chocolate layer cake with a new-fashioned, thick, and rich frosting. This treat can be made up to two days ahead.

Ingredients
Cake
  • Nonstick vegetable oil spray
  • 2 cups sifted cake flour (sifted, then measured)
  • 1 cup unsweetened cocoa powder (preferably Dutch-process)
  • 1 1/4 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 cups (packed) golden brown sugar
  • 1 cup plus 2 tablespoons (2 1/2 sticks) unsalted butter, room temperature
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup plus 2 tablespoons buttermilk
  • 1/2 cup lukewarm water
  • 1 cup semisweet chocolate chips

Frosting
  • 24 ounces imported milk chocolate (such as Lindt), finely chopped
  • 3 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped
  • 1 1/2 cups sugar
  • 1/2 cup water
  • 2 1/4 cups whipping cream
Methods

For cake:
Preheat oven to 350°F. Spray three 9-inch-diameter cake pans with 1 1/2-inch-high sides with nonstick spray. Line bottom of pans with parchment paper. Whisk flour and next 4 ingredients in medium bowl. Using electric mixer, beat brown sugar and butter in large bowl until fluffy, about 2 minutes. Add eggs 1 at a time, beating well after each addition. Beat in vanilla. Beat in dry ingredients in 3 additions alternately with buttermilk in 2 additions. Beat in 1/2 cup lukewarm water. Stir in chocolate chips.

Divide batter among prepared pans (about 2 1/3 cups for each). Smooth tops. Bake cakes until tester inserted into center of cakes comes out clean, about 22 minutes. Cool completely in pans on racks. Invert cakes onto 9-inch-diameter cardboard rounds or tart pan bottoms (cakes are delicate). Peel off parchment.

For frosting:
Combine milk chocolate and bittersweet chocolate in large bowl. Stir sugar and 1/2 cup water in medium saucepan over medium heat until sugar dissolves. Boil without stirring until syrup is deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 10 minutes. Carefully and slowly add whipping cream (mixture will bubble vigorously). Stir over low heat until any hard caramel bits dissolve and mixture is smooth. Pour caramel over chocolate; let stand 1 minute to allow chocolate to soften, then whisk until chocolate is melted and smooth. Chill chocolate-caramel frosting until completely cool, about 2 hours. Let stand 1 hour at room temperature before continuing.

Using electric mixer, beat frosting just until color resembles milk chocolate and frosting is easily spreadable, about 1 minute (do not overbeat or frosting will become stiff and grainy). If necessary to correct graininess, set bowl with frosting over saucepan of simmering water for 10-second intervals, whisking just until frosting is smooth and spreadable.

Place 1 cake layer on platter, flat side up. Spread 1 cup frosting evenly over top. Top with second cake layer, flat side up, pressing slightly to adhere. Spread 1 cup frosting over top. Top with third cake layer, rounded side up, pressing slightly. Spread remaining frosting over top and sides of cake, swirling decoratively. (Can be made 2 days ahead. Cover with cake dome and store at room temperature.)

Caramel swirl cheesecake

This easy dessert will be a smash hit with family and friends.

Ingredients (serves 10)

  • 250g plain sweet biscuits
  • 125g butter, melted
  • 500g cream cheese, softened
  • 1/2 cup firmly packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 3/4 cup thickened cream
  • 2 tablespoons plain flour
  • Caramel

  • 8 caramel chews
  • 2 tablespoons thickened cream
  • Caramel sauce

  • 1 cup firmly packed brown sugar
  • 300mls thickened cream
  • 60g butter, chopped

Method

  1. Preheat oven to 160°C/140°C fan-forced. Grease a 6cm-deep, 19cm square cake pan. Line base and sides with baking paper, allowing a 5cm overhang.

  2. Place biscuits in a processor. Process until fine crumbs form. Add butter. Process until combined. Press mixture into base of prepared pan. Refrigerate for 30 minutes.

  3. Meanwhile, make caramel: Place caramels and cream in a small saucepan over medium-low heat. Cook, stirring, for 2 to 3 minutes or until smooth. Remove from heat.

  4. Using an electric mixer, beat cream cheese, sugar and vanilla until smooth. Add eggs, 1 at a time, beating after each addition. Beat in cream and flour until just combined.

  5. Pour mixture into prepared pan. Place spoonfuls of caramel on cheese mixture. Using a wooden skewer, swirl through caramel. Bake for 50 minutes or until centre is almost set. Cool in oven for 3 hours with door slightly ajar. Refrigerate overnight.

  6. Make caramel sauce: Place sugar, cream and butter in a saucepan over medium heat. Cook, stirring, for 4 to 5 minutes or until boiling. Reduce heat to low. Simmer for 2 minutes or until slightly thickened. Remove from heat. Set aside for 10 to 15 minutes to cool slightly. Serve cheesecake with caramel sauce.

Coconut cake with caramel berries

'Tis Mother's Day eve and you haven't planned a thing? No need to worry, just bake her this spectacular cake and we promise she'll be impressed!

Cooking Time

Equipment

Angel food cake tin

Ingredients (serves 10)

  • 6 eggs at room temperature, separated
  • 1 1/2 cups (330g) caster sugar
  • 100ml canola oil
  • Finely grated rind and juice of 2 limes
  • 1/2 tsp cream of tartar
  • 2 cups (300g) self-raising flour, sifted 3 times
  • 2 tbs (15g) desiccated coconut
  • 1/4 tsp salt
  • 1 1/4 cups (200g) icing sugar, sifted
  • Caramel Berries

  • 150g caster sugar
  • 1/4 cup lime juice
  • 2 x 250g punnets strawberries, hulled and thinly sliced widthways
  • 120g punnet raspberries

Method

  1. Preheat oven to 190°C. Using an electric mixer, beat egg yolks and 1/2 the caster sugar until very thick and pale. Combine oil, lime rind and 3/4 cup water in a jug. With mixer on low speed, gradually pour mixture in, beating until just combined.

  2. Using an electric mixer, beat eggwhites until foamy. Add cream of tartar and beat until soft peaks form. Gradually add remaining caster sugar, 1 tbs at a time, continuing to beat until thick and glossy.

  3. Sift flour, coconut and salt over yolk mixture and whisk until just combined. Using a large metal spoon, fold in eggwhite mixture in 2 batches. Spoon mixture into an ungreased 25cm tube (angel food) cake tin (from kitchenware stores). Level top then bake on lowest shelf in oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Immediately invert cake tin, supporting it on its legs. Cool, inverted in tin (cooling the cake suspended prevents it from sinking).

  4. Using a palette knife, run knife around inner edge of cooled cake to release it from tin. Turn on to a plate. Combine icing sugar and enough lime juice to form a thick icing then spoon over cake, allowing it to drip down sides. Stand until set. Meanwhile, for caramel berries, combine sugar and 1/4 cup water in a small saucepan. Stir over low heat until sugar dissolves, then simmer without stirring until mixture forms a dark caramel. Remove from heat. Add lime juice and 1/4 cup water and stir well. Top cake with strawberries and raspberries, then place remaining berries in a heatproof bowl. Pour hot caramel mixture over and cool. Drizzle a little of the mixture over top of cake and serve with remaining berries.

Almond cake with strawberries & caramel sauce

If you've got a special occasion to celebrate, then we've got the cake for you. Decorated with goeey caramel and berry "hearts", this moist cake is perfect!

Preparation Time

Ingredients (serves 12)

  • Melted butter, to grease
  • 130g (1 1/4 cups) almond meal
  • 75g (1/2 cup) self-raising flour
  • 200g butter, at room temperature
  • 215g (1 cup) caster sugar
  • 1/2 tsp vanilla essence
  • 4 eggs
  • 2 x 300ml ctns double cream
  • 2 x 250g punnets strawberries, washed, hulled, sliced lengthways
  • Caramel sauce

  • 12 soft caramels (such as Pascall Columbines)
  • 80ml (1/3 cup) pouring cream

Method

  1. Preheat oven to 180°C. Brush a round 20cm (base measurement) cake pan with melted butter to lightly grease. Line the base and side with non-stick baking paper. Combine the almond meal and flour in a bowl.

  2. Use an electric beater to beat the butter, sugar and vanilla in a large bowl until pale and creamy. Add the eggs, 1 at a time, beating well after each addition until combined. Use a large metal spoon to fold the almond meal mixture into the egg mixture until well combined.

  3. Spoon the mixture into the prepared pan and smooth the surface. Bake in oven for 55 minutes or until a skewer inserted into the centre of the cake comes out clean. Set aside in the pan for 10 minutes to cool before turning onto a wire rack to cool completely.

  4. Meanwhile, to make the caramel sauce, combine the caramels and pouring cream in a small saucepan over medium heat. Stir until the caramels melt and the mixture is smooth. Set aside to cool to room temperature.

  5. Use a balloon whisk to lightly whisk the double cream in a medium bowl until the cream thickens slightly. Use a large serrated knife to cut the cake in half horizontally. Place the base of the cake, cut-side up, on a cake stand. Spread half the double cream over the cake and top with half the strawberries. Repeat with the remaining cake, double cream and strawberries. Drizzle over the caramel sauce and serve immediately.

Caramel crunch cake

Ingredients (serves 10)

  • 583g packet devil's food cake mix (includes ready-to-spread frosting)
  • 3 eggs
  • 1/4 cup vegetable oil
  • 3/4 cup thickened cream, whipped
  • Caramel crunch

  • 1/2 cup caster sugar
  • 2 tablespoons honey
  • 1 teaspoon bicarbonate of soda

Method

  1. Prepare cake following packet directions, using 3/4 cup cold water. Turn out onto a wire rack to cool completely.

  2. Meanwhile, make caramel crunch Line a baking tray with baking paper. Place sugar, honey and 2 tablespoons cold water in a saucepan over low heat. Cook, stirring, for 5 to 7 minutes or until sugar has dissolved. Increase heat to medium. Cook, without stirring, brushing down sides of pan occasionally with a wet pastry brush, for 5 to 6 minutes or until light golden. Remove from heat. Stir in bicarbonate of soda. Pour mixture onto prepared tray. Set aside to cool completely.

  3. Using the end of a rolling pin, break caramel into small pieces.

  4. Using a serrated knife, cut cake horizontally into thirds. Place base on a plate. Top with half the cream and one-third of the caramel. Repeat with middle layer, remaining cream and half the remaining caramel. Top with cake top. Spread over frosting. Sprinkle with remaining caramel. Serve.

Caramel-Almond Coconut Cake

Cake:
1 (18.25-ounce) package yellow cake mix with pudding
3 large eggs
1 1/4 cups water
1/3 cup vegetable oil
1 1/2 cups flaked coconut - divided use

Caramel-Almond Topping:
1/2 cup (1 stick) butter
1/2 cup caramel ice cream topping
3 tablespoons heavy whipping cream
1 cup (3 ounces) sliced almonds
1 cup (6 ounces) NESTLÉ® TOLL HOUSE® SWIRLED™ Milk Chocolate & Caramel Morsels
FOR CAKE:
  1. Preheat oven to 350°F (175°C). Grease and flour 13 x 9-inch baking pan.
  2. BEAT cake mix, eggs, water and oil in large mixer bowl on low speed for 30 seconds. Beat on high speed for 2 minutes. Stir in 1/2 cup coconut. Spoon into prepared baking pan.
  3. BAKE for 28 to 35 minutes or just until wooden pick inserted in center comes out clean.

FOR CARAMEL-ALMOND TOPPING:
While cake is baking, prepare topping. Melt butter in medium saucepan over medium-low heat. Stir in caramel topping and cream. Stir in almonds and remaining coconut. Increase heat to medium and bring mixture to a full boil. Boil for 5 minutes or until thick but still spreading consistency, stirring constantly. Carefully spread mixture over cake just as it comes out of oven. Sprinkle morsels over cake while still
hot out of the oven. Cool completely in pan on wire rack.
Makes 15 servings.

Pumpkin Pecan Bundt Cake with Spiced Caramel Sauce

3/4 cup coarsely chopped pecans
1 (18.25-ounce) package yellow cake mix
1 (30-ounce) can LIBBY'S® Easy Pumpkin Pie Mix - divided use
3 large eggs
1/4 cup vegetable oil
3/4 cup packed brown sugar
2/3 cup (5 fluid-ounce can) NESTLÉ® CARNATION® Evaporated Milk
step:
  1. PREHEAT oven to 350°F (175°C). Grease 9 1/2-inch Bundt pan. Sprinkle nuts in bottom of prepared pan.
  2. BEAT cake mix, 2 cups pumpkin pie mix, eggs and oil in large mixer bowl for 2 minutes. Spoon into prepared pan.
  3. BAKE for 35 to 40 minutes or until wooden pick inserted in cake comes out clean. Cool in pan on wire rack for 15 minutes. Invert onto wire rack to cool completely. Transfer cake to serving platter.
  4. COMBINE remaining pumpkin pie mix, brown sugar and evaporated milk in medium, heavy-duty saucepan. Bring mixture to a boil over medium heat. Boil for 1 minute; remove from heat. Serve warm sauce with slices of cake.
