Lemon Bundt Cake with Berry Rhubarb Glaze

Ingredients

Cake:

  • 3 1/4 cups cake flour, sifted
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 3/4 cup sour cream
  • Finely grated zest from 1 lemon
  • 1/4 cup lemon juice
  • 2 tablespoons pure vanilla extract
  • 4 large eggs
  • 2 1/4 cups sugar
  • 3/4 cup vegetable oil

Glaze:

  • 1 1/2 cups fresh or frozen finely chopped rhubarb (thawed), about 6 ounces
  • 1 cup (about a 12-ounce jar) red berry jam (such, strawberry, red current, lingonberry or seedless red raspberry)
  • 1 to 2 tablespoons water
  • Pinch fine salt
  • 1/2 teaspoon pure vanilla extract

Directions

Special equipment: 10-cup bundt pan

Position a rack in the middle of the oven and preheat to 350 degrees F. Generously brush the bundt pan with shortening and dust with flour.

Whisk the flour, baking powder, baking soda and salt together in a large bowl and set aside. In another bowl, whisk the sour cream, lemon zest, lemon juice and vanilla and set aside.

Whisk the eggs and sugar together in another bowl, stirring vigorously to lighten the eggs. Gradually whisk in the oil until evenly combined. Add the sour cream mixture and stir together. Add the dry ingredients and stir with a wooden spoon just until combined but still a bit lumpy. Pour the batter into the prepared pan.

Bake the cake until it pulls away from the sides of the pan and a skewer inserted into the center of the cake comes out clean, about 1 hour. Cool 10 minutes; then unmold cake onto a rack placed over a baking sheet. Cool. (The cake can be prepared to this point a day ahead.)

When ready to serve. Combine the rhubarb, jam, water and salt in a small saucepan and simmer until the rhubarb gets translucent and syrupy, almost jewel like,, about 10 minutes. Add a bit more water, if the glaze gets too thick . Remove from the heat and stir in vanilla. Let cool slightly. Spoon some of the glaze over the top of the cake, and reserve the rest for serving with sliced cake. Serve.

Cook's Note: We like to bake this cake the day before we serve it so the flavors and texture ripen. If you bake it a day ahead, glaze the day you plan to serve it.

Luscious lemon baked cheesecake

Can be frozen baked but undecorated

Ingredients
  • 225g digestive biscuits
  • 100g butter , melted
  • 250g tub mascarpone
  • 600g soft cheese
  • 2 eggs , plus 2 yolks
  • zest 3 lemons , juice of 1
  • 4 tbsp plain flour
  • 175g caster sugar

For the Topping
  • ½ a 284ml pot soured cream
  • 3 tbsp lemon curd
  • handful raspberries , to serve (optional)
Methods
  1. Heat oven to 180C/fan 160C/gas 4. Line the bottom of a 23cm springform tin with greaseproof paper. Tip the biscuits and melted butter into a food processor, then blitz to make fine crumbs. Press into the tin and chill.
  2. Whisk all the other ingredients in a large bowl until completely combined, pour into the tin, then bake for 35-40 mins until the cheesecake has a uniform wobble.
  3. Turn off the oven and leave the cake inside until cool. When it is completely cooled, remove from the tin and top with soured cream. Swirl lemon curd over the top and decorate with raspberries, if you like.

Tip

To turn this tasty dessert into an orange or lime-flavoured cake, simply swap the zest and juice of lemon to that of your chosen citrus fruit.

Lemon drizzle cake

Lemon drizzle cake recipe

Serves: makes 1 cake

A zippy lemon sponge glazed with a delicate sugar crust from Eleanor Smallwood

Ingredients

For the cake

  • 225g butter, softened
  • 400g caster sugar
  • 3 lemons, finely grated zest only
  • 4 eggs
  • 375g plain flour
  • 2 tsp baking powder
  • 235ml milk

For the glaze

  • 3 lemons, juice only
  • 150g granulated sugar

Method

1. For the cake: preheat the oven to 180C/gas 4. Grease and flour a 25cm bundt tin.

2. Cream the butter and sugar with the lemon zest until pale and thick. Beating the lemon zest will help draw out the oil making the cake lovely and lemony.

3. Stir in the eggs, one at a time. If the mixture threatens to curdle, add a tablespoon of the flour to stabilise it.

4. Mix in a little of the flour and baking powder with alternate glugs of the milk until all the ingredients are incorporated.

5. Spoon the mixture into the bundt tin and bake for 1 hour – 1 hour 10 minutes, until a toothpick inserted into the centre comes out clean. Cool in the tin for 10 minutes before turning out onto a rack. Prick all over with a toothpick.

6. For the glaze: mix the lemon juice and sugar, just swirling gently so the sugar doesn’t completely dissolve.

7. Drizzle the lemon glaze all over the warm cake - it will seep into the holes leaving a delicate sugar crust on the surface. Decorate with flowers and eat the day you make it.

Lemon curd cheesecake slice

Lemon curd cheesecake slice

Ingredients (serves 12)

  • 1 x 200g pkt Arnott's Lattice biscuits
  • 500g cream cheese, softened
  • 1 x 395g can condensed milk
  • 1 lemon, rind finely grated, juiced
  • 3 tsp gelatine
  • 2 tbs boiling water
  • 285g (1 cup) lemon curd
  • Caramelised lemon slices (optional), to serve

Method

  1. Line the base and 2 long sides of a 20cm x 30cm slice pan with baking paper, allowing the sides to overhang. Line the base with the biscuits, cutting to fit if necessary.

  2. Use an electric beater to beat the cream cheese in a bowl until smooth. Add the condensed milk, lemon rind and lemon juice and beat until combined. Place the gelatine and boiling water in a small bowl. Stir until gelatine dissolves. Add to the cream cheese mixture and beat until combined.

  3. Pour half the cream cheese mixture over the biscuit. Spoon over half the lemon curd. Use a skewer to swirl. Repeat with remaining cream cheese mixture and lemon curd. Place in the fridge for 3-4 hours until set. Top with caramelised lemon, if desired. Cut into slices to serve.

Lemon and poppy seed drizzle cake

Ingredients

  • 225g unsalted butter, softened
  • 225g caster sugar
  • 4 large free-range eggs, beaten
  • 175g self-raising flour
  • 1tsp baking powder
  • 75g ground almonds
  • Zest and juice of 3 lemons
  • 25g poppy seeds

For the soaking drizzle

  • Zest and juice of 1 lemon
  • 100g icing sugar, sifted
  • 1tbsp goldencaster sugar

Method

  1. Heat the oven to Mark 4/180°C. Grease and line a loose-based 20cm square cake tin. With an electric whisk, beat the butter and sugar until pale and creamy. Beat in the eggs, a little at a time, beating well after each addition and adding a spoonful of flour if the mixture begins to curdle.
  2. Sift the flour and baking powder into the bowl and fold. Add the ground almonds, lemon zest and juice and poppy seeds, and fold together until combined. Spoon into the cake tin and bake for 50 mins-1 hr or until a skewer inserted into the middle comes out clean.
  3. Cool on a rack while you make the drizzle. Mix together the lemon juice and icing sugar to form a runny syrup. Make holes on the top of the cake with a cocktail stick or skewer. Spoon over the drizzle, allowing it to soak in. Leave to cool completely in the tin. Toss the lemon zest with the caster sugar and scatter on the top to serve.
